Testimonial * Joseph Chalfoun

Joseph Chalfoun, Swiss Diploma in Hotel Management, BA(Hons) International Hospitality & Tourism Management, Master’s in International Hospitality & Tourism Leadership (2005)

Head of Operations - Middle East & Greece, Food Fund International, UAE

'In 2002,
I walked into Alpine,
a young student hungry for knowledge.

In 2005,
I left with so much more
than simply having my hunger satisfied'.

I graduated first with a Swiss Diploma in Hotel Management, then a year later with a BA(Hons) International Hospitality & Tourism Management, and finally, 12 months later with a Master’s in International Hospitality & Tourism Leadership.

During my years at Alpine I had the opportunity to put into practice what I learned and to practice the leadership skills I acquired.  As a result I served as the President of the Alumni Association.  I also had the great fortune of doing my internship in 5 star establishments that paved the way to the career opportunities I received upon graduation.

In a few years, Alpine has shaped the way I think and the way I regard the hospitality industry. It has instilled in me the right values and disciplines I needed to get me from one success to another. The passion and dedication the faculty showed me and my fellow students, taught us to regard each and every day as a chance to make a difference in the lives of people we meet. And that in itself is the essence of our industry.

In my current position, now, I attend Alpine’s Annual Career Day, to recruit student trainees and graduates for our thriving company, just because I know those students and graduates have been trained the same way I have been, trained and educated to succeed and make a difference!

Summer Mediterranean recipe from the kitchen of Georgia Kofinas

Tri-colored fusilli pasta with sundried tomato and olive pesto

At this time of the year, Greek villagers take advantage of Greece’s brilliant sunlight and hot, dry climate to dry out their homemade pasta. Most popular are the egg noodles, rolled out and cut by hand, but there are a number of small local workshops that produce other shapes and flavors of pasta as well. They take the regular pasta dough and enrich it with the addition of vegetable purees such as carrot, spinach, tomato and even beetroot to add both color and flavor. This recipe calls for a piquant pesto of sundried tomatoes, olives and herbs to be mixed with our pasta, which is made in the mountainous Lakonia, at the local workshop of Panagiotis and Stavroula.

Main ingredient
Pasta
Region Of Origin
Lakonia, Peloponnese

Ingredients
  • 500 gr tri-colored fusilli pasta
  • 250 gr sundried tomatoes in oil
  • 1-2 garlic cloves
  • 100 gr black olives, pitted
  • A few basil leaves
  • Pepper
  • ½ cup grated kefalotiri or mizithra (hard cheese)

Instructions
  1. Boil pasta in ample water with salt for about 8 minutes until al dente and drain putting aside about ½ cup liquid. Place in a large mixing bowl and add 2 tablespoons of olive oil. Mix well and set aside.
  2. To make pesto, place remaining ingredients, except grated cheese, in the blender and pulse until mixture is just blended (not smooth). Add cheese and blend.
  3. Add pesto to fusilli and toss until pesto is incorporated well. Slowly add just enough of the saved pasta liquid until the mixture is rather wet, but not watery.
  4. Serve pasta accompanied by a refreshing summer salad.

A surprise visit to the Alpine premises!

A surprise visit to our office on 28 May 2013 from Alpine Graduate Mike Mamais!
We love it when graduates walk in and share their wonderful experiences!! Mike Mamais is on a break from Disney Cruise Lines where he is having a fabulous and very well paid experience. Pictured here with Catherine Papavasiliou Gellis, Career & Placement Manager!

Mike Mamais graduated from Alpine in 2010 with a BA in International Food& Beverage Management.

He worked in Crete at a 5 star property when Alpine announced the arrival of a guest lecturer, Ramon Amore to deliver a course in cruise ship hotel operations and recruit interested graduates interested in working on Disney Cruise Lines.

After three mandatory interviews Mike found himself cruising the Caribbean aboard Disney Cruise Lines as Assistant Dinning Room Server.

In Mikes’ own words, “working in Disney Cruise Lines is an opportunity of a lifetime! The hours are long and at times work is tough, but the experiences and compensation gained are well worth it. I am very impressed by the professionalism of all the employees; we all have one goal which is to give our guests the best possible experience on the cruise. The company gives us incentive and motivates us to give our best because we as employees are very well taken care of also.”

“Working with Disney for me is also an opportunity to travel to many ports of call, and meeting interesting people from all over the world. I am now in Greece for two months of holiday before I begin the cruise season again - this time in Europe with ports of call Spain, France, Italy and Greece. I am looking forward to also starting my new position as a Dining Room Server in the Gourmet Restaurant; where else can someone work toward a promotion after only five months!" As for remuneration and benefits, Mike could not have wished for more!! Salaries are incomparable with land positions!

“I am happy to say that Alpine has given me the foundation and the educational tools and skills that are in high demand in today’s workplace. I am comfortable knowing that I have received from Alpine that which is needed in this highly competitive field.”
